No-fry Oats Moringa Mathri, Indian Savory Cracker

Moringa or Drumstick, a common Indian vegetable is now a wellness superfood. This is an attempt to combine the goodness of Moringa leaves in an extremely popular Indian snack. Mathri is a savory deep fried snack from Northern India which traditionally uses refined flour. Here is a healthier version of this popular snack which is a No-Fry Oats Moringa Mathri.

Ingredients
  

Dry Ingredients

  • 1 cup Oats Flour Take regular rolled oats or Quick oats and blend to make a fine powder. or, use readymade Oat Flour.
  • ¼ cup Whole Wheat Flour
  • ½ tsp Sesame Seeds. You can use either white or black as per your choice though I used white ones here.
  • ½ tsp Carom Seeds.
  • ½ tsp Salt
  • ½ tsp Baking Soda
  • ½ tsp Dry Mango Powder or Chat Masala.
  • ¼ tsp Coarsely crushed Black pepper.
  • ¼ tsp Coarsely Crushed Cumin seeds
  • ¼ tsp Red Chilli Flakes.
  • 1 cup Dried Moringa or Drumstick leaves. I have mentioned above how I dry the leaves. You can follow your own preferred method to dry them.

Wet Ingredients

  • 3 tbsp Melted Ghee or Oil.
  • 4 tbsp Milk. Add milk in Batches. About 1 tbsp at a time. Depending on the quality of Oats and Whole Wheat, the quantity of milk may vary.

Instructions
 

  • Take all dry ingredients in a wide Pan.
  • Mix till everything is well combined.
  • Add Melted ghee and rub.
  • Add Milk in Batches (about one tbsp a time)
  • Knead to form a crumbly dough.
  • Take a lime sized ball and press between your palms to form round Mathris or crackers.
  • Arrange on a lined cookie sheet.
  • Bake in a preheated oven @375°F/190°C for 20 minutes on one side.
  • Take out, turn and bake again for 10 minutes.
  • The mathris may appear soft when you take them out. They will turn hard once cool. So please make sure to not overbake them.
  • The colour will also turn darker once it is cool. So Bake till you see a golden color. Once cool, they will turn a perfect golden brown.
  • Enjoy this healthy snack with a hot cup of tea.
