Ingredients
  

Ingredients for Summer roll

  • 15 Nos Rice Paper Roll. They are available in the market as fresh spring roll wrap. I used the Blue Dragon Brand which is very easily available in the US.
  • 200 Grams Firm Tofu. Slice Tofu. You can use it as it is for filling in the roll. Or, for a crunchier texture, saute, bake or air fry to make them crisp and brown and then use. I airfryed them @ 380°F/180°C for 10 minutes and used them.
  • 45 Grams Rice Noodles. You can even use Indian Style rice Sevai. Prepare noodles or Sevai as per the direction on the package.
  • 1 Small Purple Cabbage Thinly sliced
  • 2 Medium Carrots Cut into Juliennes or Matchsticks
  • 1 Medium Cucumber Cut into thin long slices

Ingredients for Peanut Dipping Sauce

  • ½ cup Peanut Butter I used the unsweetened pure peanut butter.
  • 1 tbsp Coconut Sugar or any other sweetener of your choice. If your peanut butter has added sugar, then reduce the quantity of sugar accordingly.
  • 1 tbsp Hot Sauce I used Sriracha brand
  • 1 tbsp Soya Sauce
  • 1 tbsp Vinegar You can swap Vinegar for Lime juice and vice versa.
  • 1 tbsp Lime Juice
  • 3 cloves Garlic
  • 1 piece Ginger
  • 3-4 tbsp Lukewarm water

Instructions for making Summer Rolls

  • Ingredients required.
  • Take lukewarm water in a wide mouthed Pan or Plate.
  • Dip rice paper roll in water for a few seconds. it will turn soft within a few seconds.
  • Take it out immediately and spread on a dry surface. You can use a chopping board or another dry plate.
  • Arrange sliced vegetables, tofu slice and some rice noodles leaving space on all sides.
  • Fold from three sides
  • Then roll so that all sides are well packed.
  • The roll is ready. You can eat it immediately or keep it refrigerated.
  • Serve as it is with Peanut Sauce. Or slice into small disks and serve.

Instructions for making peanut butter

  • Ingredients for the Peanut Dipping sauce.
  • Add all ingredients to a small jar of blender.
  • Blend to make a fine paste.
  • Serve with Summer Rolls.
