No-Fry Oats Moringa Mathri, Savory Indian Cracker

Moringa or Drumstick, a common Indian vegetable is now a wellness superfood. This is an attempt to combine the goodness of Moringa leaves in an extremely popular Indian snack. Mathri is a savory deep fried snack from Northern India which traditionally uses refined flour. Here is a healthier version of this popular snack which is a No-Fry Oats Moringa Mathri.

Moringa or Drumstick plant is native to India and the leaves, flowers and pods of this plant have been consumed for centuries across India. The word Moringa  derives from a Tamil word, murungai, meaning “twisted pod”, alluding to the young fruit. The tree is native to India but also grows in other parts of Asia, Africa, and South America.Moringa is believed to have many benefits and its uses range from health and beauty to helping prevent and cure diseases.

Key Ingredients used for No-Fry Oats Moringa Mathri

Moringa or Drumstick Leaves

The key ingredient for this recipe is moringa leaves. Moringa leaves are quintessential in Tamilian cuisines. It is used for making poriyal (a dry curry with coconut) and Verum Arisi adai which is a savory crepe. To make this, you need to add fresh Moringa leaves to a paste of raw rice .

Using fenugreek or methi leaves for Mathri is very common in India. Unlike the fenugreek leaves, moringa leaves do not have a strong flavor so they blend very well in this recipe. I have taken the fresh Moringa leaves, used a salad spinner to wash and dry them. Then I put them in a cotton laundry bag which was sealable. I then put them in the clothes dryer and ran a complete cycle of drying. The end result was an almost dry tender green leaves. I again spread them on a kitchen towel and left them to dry. Since I had a lot of fresh leaves, even after drying I had almost 3-4 containers full of dried leaves which I filled in ziplock bags and kept in the fridge for further use. They come very handy when I want to make Moringa podi. I will share this recipe sometime later.

Oats Flour

For this recipe, you can simple dry grind rolled oats or quick cooking oats. Or, you are free to use readymade Oat Flour. You may check few other Oats recipes of mine here.

Spices

I have added the regular spices which are normally added to Mathri. These spices are Carom seeds or Ajwain, Crushed Pepper, Red chilli flakes , Dry mango powder or Amchur, salt.

Ingredients
  

Dry Ingredients

  • 1 cup Oats Flour Take regular rolled oats or Quick oats and blend to make a fine powder. or, use readymade Oat Flour.
  • ¼ cup Whole Wheat Flour
  • ½ tsp Sesame Seeds. You can use either white or black as per your choice though I used white ones here.
  • ½ tsp Carom Seeds.
  • ½ tsp Salt
  • ½ tsp Baking Soda
  • ½ tsp Dry Mango Powder or Chat Masala.
  • ¼ tsp Coarsely crushed Black pepper.
  • ¼ tsp Coarsely Crushed Cumin seeds
  • ¼ tsp Red Chilli Flakes.
  • 1 cup Dried Moringa or Drumstick leaves. I have mentioned above how I dry the leaves. You can follow your own preferred method to dry them.

Wet Ingredients

  • 3 tbsp Melted Ghee or Oil.
  • 4 tbsp Milk. Add milk in Batches. About 1 tbsp at a time. Depending on the quality of Oats and Whole Wheat, the quantity of milk may vary.

Instructions
 

  • Take all dry ingredients in a wide Pan.
  • Mix till everything is well combined.
  • Add Melted ghee and rub.
  • Add Milk in Batches (about one tbsp a time)
  • Knead to form a crumbly dough.
  • Take a lime sized ball and press between your palms to form round Mathris or crackers.
  • Arrange on a lined cookie sheet.
  • Bake in a preheated oven @375°F/190°C for 20 minutes on one side.
  • Take out, turn and bake again for 10 minutes.
  • The mathris may appear soft when you take them out. They will turn hard once cool. So please make sure to not overbake them.
  • The colour will also turn darker once it is cool. So Bake till you see a golden color. Once cool, they will turn a perfect golden brown.
  • Enjoy this healthy snack with a hot cup of tea.
