Tricolor Oats Ammini Kozhukattai, Steamed Oat Rice Balls
Tricolor Oats Ammini Kozhukattai is a slight variation to the traditional recipe of Ammini Kozhukattai. This is a famous snack item from Southern India. In Andhra, it goes by the name Undrallu Guggillu or Talimpu Undrallu and the Kannadiga name for the same is seke undlaka.
Traditionally, rice flour is the main ingredient for these kozhukattai. For some variation, I have tried to create it in three different colors to celebrate the Indian independence day which is in this week-Aug 15th.
Also, to add to the nutrition quotient, equal quantity of oat flour has been added for this Oats Ammini Kozhukattai recipe.
It is customary to make Ammini Kozhukattai during Ganesh Chaturthi when you have leftover dough from regular modak or kozhukattai. But you can make this delicious and guilt free snack anytime of the year. The best part is that it requires very few ingredients.

Tricolor Oats Ammini Kozhukattai, Steamed Oat Rice Balls
Ingredients
Ingredients for the Balls (Kozhukattai)
- ¾ cup Oat Flour Grind Rolled oats or Quick cooking oats and use.
- ¾ cup Rice Flour
- 1½ tsp Oil
- ¾ tsp Salt
- 3 cups Water
- 1 cup Spinach
- ½ cup Carrots
Ingredients for tempering
- 1 tbsp Oil
- ¼ tsp Mustard Seeds
- ½ tsp White Lentil/Urad
- ⅛ tsp Asafoetida
- 1 tsp Sesame Seeds or Flax Seeds
- 1 tbsp Grated Fresh Coconut
- 1 tbsp Idli Milagai podi (Gun Powder), Chilli Powder
- 1 sprig Curry Leaves
Instructions
- Dry roast Oat flour and Rice flour for 3-4 minutes.
- Divide the roasted dough into three parts (1/2 cup each)
Prepare White Dough
- Heat a cup of water.
- When water starts to boil, add salt and oil.
- Then add one part of the roasted flour.
- Stir to make a dough.
- Transfer to a plate.
- Keep it covered for 5 minutes.
Prepare Green Dough
- Heat a cup of water.
- When water boils, add spinach.
- Remove spinach in a minute or two and add to a small blender jar.
- Add some water from the same pan to the small jar.
- Make a fine puree and add it back to the same water.
- Add salt and oil.
- Then add one part of the roasted flour.
- Stir to make a dough.
- Transfer to a plate.
- Keep it covered for 5 minutes.
Prepare Orange Dough
- Heat a cup of water.
- When water boils, add chopped carrots.
- Remove carrots in a minute or two and add to a small blender jar.
- Add some water from the same pan to the small jar.
- Make a fine puree and add it back to the same water.
- Add salt and oil.
- Then add one part of the roasted flour.
- Stir to make a dough.
- Transfer to a plate.
- Keep it covered for 5 minutes.
Prepare kozhukattai
- Knead the dough when it is still warm by adding a few drops of oil.
- Make small balls by using about a tsp of dough for each ball.
- Prepare balls with all three dough.
- Add water in a steamer. Keep a greased plate on it.
- Cover and let the water come to a boil.
- Uncover and add the prepared balls in the steamer plate.
- Cover and cook for 10 minutes.
