Two Easy Vegan Desserts with Fresh Apples
Craving a dessert on a chilly night? Here are two easy vegan desserts where fresh apples shine. These are a must try classic recipes when you need guaranteed delicious desserts without putting in a ton of effort. Apple is truly a baker’s best friend due to its sweet flavor and firm texture. Raw, baked or stewed, they taste delicious in all forms. Apples can do pretty much anything when it comes to desserts.
This being the season for apples and for date palm jaggery, make these classic desserts which require very few ingredients, require no preparation, and are one-bowl recipes. These recipes can be individually portioned and at the same time can be crowd pleasing recipes as they require no stove top cooking.
I have used a special ingredient here which is Date Palm jaggery more popularly known as Patali Gur or Khejur Gur. This is a Bengali winter delicacy. This jaggery is made from the sap of the date palm. This is much awaited by people of Bengal and they use it extensively in place of sugar in their winter delicacies. Patali gur lends your dishes a great sweet, smoky flavor and its taste is simply unmatched by sugar. If you can not source Date Palm jaggery, then you may use regular jaggery. But adding Date Palm sugar will be a delicious amalgamation of Indian flavors in a western dessert.

The first recipe is the classic Baked Apple. Use any good quality Baking apple or any other variety locally available to you. The only preparation required for this recipe is to core your apples. And then stuff it with a mixture of nuts, sweetener and some fat. Bake it and have it warm with cream, custard or Vanilla ice cream. For a healthier option, you can also have it with chilled yogurt.
The second recipe is another timeless recipe which is classic apple crumble. In some countries like the UK, Apple crumble is synonymous with apple crisp. But there is a little difference between Apple crumble and apple crisp. A crumble is a dish of baked fresh fruit, with a streusel crumb topping. Like a crumble, a crisp is a baked fresh fruit dessert, but the streusel topping is less dense and typically includes oats. The oats will crisp up during baking, while crumble toppings stay more dense and cakey.

Ingredients
Ingredients for Baked Apple
- 2 Nos Apples. You can use any good quality apple suitable for baking like Granny Smith, honey crisp or the red delicious variety.
- 2 tbsp Crushed Walnuts. Or use any nut of your choice like almonds, pecans, cashew nuts.
- 2 tbsp Coconut Sugar. You can use jaggery or brown sugar too.
- 1 tbsp Ghee or Butter. For vegan option use cold pressed coconut oil or Vegan butter.
- 4 tsp Cinnamon Powder.
- 1/8 cup Water.
Ingredients for Apple Crumble
- 1 No Apple. You can use any good quality apple suitable for baking like Granny Smith, honey crisp or the red delicious variety.
- 1 tsp Lime juice
- ½ tsp Cinnamon Powder
- ¼ tsp salt
- 1 tsp Ghee or cold pressed coconut Oil. You can use butter or vegan butter as well.
- 2 tbsp Date Palm jaggery . You can use regular jaggery or brown sugar too. But Date palm jaggery has a very distinct taste and is available in India during winter months. So if possible, try using it.
Ingredients for Crumbs
- ½ cup Oat flour
- ¼ cup Date Palm jaggery. You can use regular jaggery or brown sugar too. But Date palm jaggery has a very distinct taste and is available in India during winter months. So if possible, try using it.
- ¼ tsp Cinnamon powder
- 1 tbsp Ghee or cold pressed coconut oil. You can use Butter or Vegan butter as well.
Ingredients to serve
- 2 scoops Vanilla Ice cream or custard or cream or chilled yogurt.
Instructions
Baked Apple
- Wash and dry 2 apples. Then using a corer or paring knife, core the apples.
- Cored apples.
- In a small bowl, add coconut sugar and ghee.
- Mix it well using spoon or hand
- Add cinnamon powder
- Add crushed walnuts
- mix everything together
- Fill this stuffing inside the cavity of apples. Press with fingers on both sides of the cavity so that the filling does not fall out.
- Arrange apples on a small baking tray.
- Put 1/8cup or about 2 tbsp of water in the base of the pan.
- Bake in a preheated oven at 350°F/180°C for 45 minutes or till apples turn tender.
- Take out. Slice and serve warm with icecream or custard or yogurt
- Use juice from base to glaze apples.
Apple Crumble
- Peel an apple.
- Cut into small pieces.
- Grease a small baking pan. You can use a saucer or bowl too.
- Arrange apple slices on it.
- Add cinnamon powder.
- Add Lime Juice.
- Add Salt
- Add a tsp of ghee or butter or coconut oil.
- Add date palm jaggery.
- Mix everything together and keep aside.
- In a separate bowl, take date palm jaggery.
- Add oat flour to it.
- Add cinnamon powder.
- Add 1 tbsp of ghee or coconut oil.
- Mix everything till well incorporated.
- you can make the crumb ahead and keep it refrigerated till ready to use.
- Layer this prepared crumb on top of apple.
- Bake in a preheated oven at 350°F/180°C for 45 minutes.
- Take out and serve. Warm crumble is served with chilled yogurt, custard, cream or icecream.
