This Dates Banana Whole Grain Bread is a whole grain, healthy, vegan bread perfect for a wholesome and nourishing breakfast. On top of it, this bread is super easy to make.

Baking is my favorite activity and when it comes to baking homemade bread, I find it the most relaxing.

For this Dates Banana Bread, I have used soft dates. But you may use any other sweetener like jaggery or brown sugar.

This is a very good recipe for consuming overripe bananas. The shelf life of this bread is up to 4 days at room temperature. For longer usage, you may refrigerate up to 7-8 days. For a fresher taste, reheat in a microwave for 30 seconds covered with a wet paper napkin and eat immediately. A dash of salted butter on top takes it to the next level.

Ingredients
  

  • 3 large Overripe Bananas
  • cup Whole Wheat Flour I used regular Indian Chapati Atta (Aashirvaad Brand). You may use any similar brand.
  • ½ cup Soft Dates If you don't have soft dates, soak regular dates in hot water for sometime and then use.
  • cup Olive Oil
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon Powder
  • 1 tsp Vanilla Extract
  • ½ cup Walnuts or any nuts of choice
  • ¼ tsp Salt
  • ¼ cup Any Plant Milk Add if required if the consistency of the batter is too thick.

Instructions
 

  • Preheat the oven @ 350°F/180°C.
  • Roughly chop Bananas.
  • Add soft dates.
  • Blend to make a smooth paste. You may add a little milk to help blend.
  • Take out in a bowl.
  • Then add all other ingredients one by one and mix.
  • Add some plant milk if the consistency appears too thick.
  • Add chopped walnuts.
  • Bake for about 55 minutes or an hour in the preheated oven @ 350°F/180°C.
  • Check for doneness by inserting a toothpick. Take out and let cool.
  • Slice and serve.
