Here is an easy recipe for No Fry Banana Chips. Kerala Style Banana or Plantain or Nendran chips need no introduction. It is extremely popular not only in the state of Kerala in India, but you can find it almost everywhere in the world, in the snacks aisle.

Plantain is a staple food item in Kerala and all the parts of the plant-root, flowers, fruit, peel become the ingredients for various delicacies here. Also, It is customary to have food in Banana Leaves. Plantain in any form, raw or ripe is popular. The malayalam name for plantain is Nendran Kai for the unripe variety and Nendran Payam for the ripe variety.

In Kerala, in every street, you can see shops selling fresh chips which they fry in coconut oil right in front of your eyes. I have presented a no fry version of the banana chips. The first option is to Air fry them and the second option is to microwave.

I found a little difference in both variations. The one fried in the airfryer tasted exactly the same as the traditional recipe. But the one cooked in the microwave appeared a little hard to me.

Equipment

  • Philips Airfryer
  • Microwave Oven

Ingredients
  

  • 2 Nos Unripe Plantain. Known as Nendran kai in Malayalam.
  • 1 tbsp Coconut Oil
  • ½ tsp Turmeric Powder
  • ¼ tsp Salt

Instructions
 

  • Make slits in Plantain to help remove the skin easily.
  • Pull the skin out.
  • Remove the skin completely.
  • You can use the skin to make delicious Kerala style Thoran or Kootu.
  • Use a mandoline slicer or knife to make thin slices of the Plantain.
  • In a plate, add oil, turmeric and salt.
  • Mix well with a brush or spoon.
  • Coat banana slices with this mixture with the help of a brush or with your hands.
  • If Airfrying, then arrange on the airfryer basket. Cook @360°F/180°C for 15 minutes. Depending on the make of your airfryer, you may need to preheat. Mine does not require any preheating.
  • If microwaving, then arrange on a glass plate. Microwave @100%power for 3 minutes. Then @50% power for 2 minutes. Then again @50% power for 2 minutes. Depending on the make of your oven, the timing may slightly vary. So after the first 3 minutes, please keep a close eye.
  • Enjoy this healthy snack.
