Mahabaleshwar Style Corn Patties are famous street food from this the largest hill station in the Sahyadri range of Maharashtra state. Come monsoon and you can smell the aroma of fresh corn patties from every nook and corner of Mahabaleshwar.

Typically deep frying the patties is more common in Mahabaleshwar and for extra crispiness, adding a few slices of bread is also common.

But this recipe of mine is a no fry version of the famous Mahabaleshwar style corn patties. And, another variation from the traditional recipe is using Plantain for the outer covering. Cooked plantains are nutritionally very similar to a potato, calorie-wise, but contain more of certain vitamins and minerals.

Ingredients
  

Ingredients for the Dough

  • 4 Nos 4 Plantains or 4 Potatoes or 2 Plantains and 2 potatoes
  • 1 tsp Salt
  • 1 tsp Coriander powder
  • ½ tsp Turmeric powder
  • ½ tsp Dry Mango Powder or Lime Juice
  • ¼ tsp Red chilli powder
  • ¼ tsp Garam masala

Ingredients for the stuffing

  • 1 tsp Oil
  • ¼ tsp Cumin Seeds
  • 1 No Green Chilli chopped
  • 1 small Onion, chopped
  • cups Fresh Corn If using frozen corn, then thaw and crush coarsely in a mixer.
  • 1 tsp Salt
  • 1 tsp Jaggery
  • ½ tsp Coriander powder
  • ½ tsp Turmeric powder
  • ½ tsp Dry mango powder or lime juice
  • ¼ tsp Garam masala
  • cup Coriander leaves

Instructions
 

Make the dough or outer covering

  • Heat water in a pressure cooker.
  • Keep a steamer plate or any container inside .
  • Keep plantains and potatoes either in a steamer plate or in a vessel inside the pressure cooker. Please don't put the vegetables directly into water as otherwise they will absorb a lot of water and patties will become soggy. You can even cook the vegetables in a normal pan.
  • Pressure cook for 5 or 6 whistles or till potatoes and plantains turn tender.
  • Take out and peel.
  • Mash with a masher to remove all lumps.
  • Add all the remaining ingredients.
  • Knead to make a soft dough.

Make the stuffing

  • Heat oil in a pan.
  • Add cumin seeds, green chilli and onion and saute for 2-3 minutes.
  • Add all the remaining ingredients except coriander leaves.
  • Cook till corn turns tender.Turn off flame, add coriander leaves. Let the mixture cool.

Make Patties

  • Grease your palms with a little oil so that the dough does not stick to your hands.
  • Take a lemon sized dough ball.
  • Flatten it to a 2 inch circle.
  • Put about a tbsp of filling in between.
  • Close from all sides.
  • Flatten to make a round patty.
  • Prepare about 5 or 6 patties from the remaining dough.Brush the prepared patties lightly with any cooking oil.

Baking Patties

  • Arrange on a lined tray and bake in a preheated oven @400°F/200°C for 25 minutes on each side.
  • If you want to Air fry, then arrange on the tray and Air Fry @390°F/180°C for 15 minutes on one side. Flip and bake again for 5 minutes. Please preheat your airfryer if you need to. My airfryer does not require preheating.
  • Baked Patties will be crispy.
  • Serve hot patties with any chutney or dip of your choice.
