Broken Wheat Carrot No oven Bread is ideal for people careful about their diet and those who need a boost of energy to get the day started. Daliya has high nutritional value and double the amount of iron, thiamine and niacin than that of refined wheat.
This recipe is an absolute favorite of mine. Easy to make, this wholesome bread tastes delicious in any form whether you have it as is,or toasted or for stuffed sandwiches.
This bread uses 100% whole grain in the form of Broken or Cracked wheat also known as Daliya or Lapsi in Hindi.Broken wheat or cracked wheat is made by milling whole raw wheat grains coarsely. Wheat is cleaned and husked and then processed to the required size. It is highly nutritious as it does not undergo refining. Such cracked wheat has a large number of uses, especially as a dietary supplement.
This recipe will yield about 10 large slices each slice having 87 kcal with 17 grams of Carb and 5 grams of protein.

BROKEN WHEAT CARROT BREAD
Ingredients
- 250 grams Broken Wheat or Cracked Wheat, also known as Daliya
- 1 cup Greek Yogurt
- 1 tsp Himalayan Pink Salt
- 1 tbsp Brown Sugar
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/2 tsp Eno Fruit Salt
- 1/2 tbsp Lime Juice
- 1/2 cup Grated Carrots
Instructions
- Add broken wheat, yogurt, salt and sugar in a bowl.Cover and keep aside for 4 hours.
- Add the soaked mixture to a blender and grind to a slightly coarse paste (like semolina).
- Add Baking powder, Baking Soda, Eno, Lime juice and carrot to the batter.
- Grease a loaf pan.Spread the batter in the greased pan.
- For baking the bread in Gas, preheat a Dutch Oven or any heavy bottom pan on the stove with the lid on for about 10 minutes. Then place a trivet inside and then keep the loaf pan on top of the trivet. Cover and cook the bread for about 50 minutes on low flame.
- Brush a little ghee on top once or twice in between to get a nice golden color.
- For baking the bread in the oven, preheat the oven to 400°F/200°C . Then keep the loaf pan inside and bake for about 35 minutes.
- Let the baked bread cool completely before slicing.
- Slice and serve with your favorite topping.
