This is my favorite bread recipe so far since it requires just basic ingredients. I have been baking my own bread for over 20 years now and this recipe is a favorite of mine. I have tested and tried this recipe multiple times and is a fail proof recipe for sure.
This recipe calls for fine Semolina which is also known as Durum flour. This recipe uses just five basic ingredients for this perfect white sandwich bread loaf.
In southern India, Chiroti Rava is a better known term for fine Semolina. The hindi name for Semolina is Suji or Rava. If fine Suji or Rava is not available near you, you can finely grind the coarse variety which is more easily available everywhere.
Semolina Vs. Refined Flour
Even though Semolina is made of flour, it is considered better than refined white flour since Semolina is a high protein flour made from coarsely ground durum wheat. It is considered a high-protein flour (21 grams of protein per cup vs 16 grams of protein per cup for regular flour, per the USDA) and it also packs higher concentrations of minerals like iron, zinc, potassium and phosphorus.
Semolina benefits weight management, heart health and your digestive system.
Due to the high concentration of carotenoids in the wheat, Semolina is slightly yellow in color. Homemade Sandwich Bread with Semolina
There is no greater joy than baking your own bread and seeing a perfect loaf coming out. Rising tall, tasting delicious. So lets get set to baking your own Bread with this very easy and healthy recipe for Homemade Sandwich Bread with Semolina.
Even though Semolina is made of flour, it is considered better than refined white flour.Semolina is a high protein flour made from coarsely ground durum wheat
3½ cups Fine Semolina. (You can grind coarse Semolina and use.)
¼ cup Powdered Milk
1 tsp Salt
1½ cups Water.
1 tsp Yeast.
1 tbsp Brown granular sugar.
3 tbsp Olive Oil or any oil.
Add yeast and Brown sugar in a Bowl.
Add 1 cup of lukewarm water.
Make sure that the water is lukewarm. You can touch with your finger and feel it. Or use a thermometer. Temperature should be between 100-110°F or 37-43°C.
Set aside yeast mix for about 5 minutes or till yeast becomes frothy.
In a large bowl, take semolina.
Add powdered milk to Semolina.
Add Salt.
Add activated yeast mixture.
Option 1-Knead with hands for about 25 minutes. Add 3 tbsp of oil in short intervals while kneading.
Option 2-Knead with a stand Mixer.Use dough hook and knead at speed 6 for about 12 minutes. Add 3 tbsp of oil gradually.
After kneading, cover the dough and keep aside to rise. Depending on the climate it may take from 40 minutes to 2 hours.
The dough should become double in size after 2 hours.
Punch the dough to remove air pockets.
Spread on an oiled surface.
Shape into a loaf.
Grease a Loaf Pan.For this ratio, a Bread pan of 8×4 size will be ok.
Put the dough in a greased pan.
Let the dough rise again for half an hour.
Brush with Milk.
Bake in a preheated oven at 400°F/200°C for about 30 minutes.
Take it out of oven.
Brush with Butter.
Let cool on a wire rack.
Cover with a cloth napkin or towel to keep crust soft.

You can make this healthy FroYo using many other fruits like Mangoes, Raspberry, Watermelon, Chikoo or Sapota etc. To the plain Banana variety, try adding multiple other flavors like coffee, caramel, butter scotch and create your own favorite Frozen Yogurts.
These Froyos are any day better than the store bought version since they are free of any preservative, color, flavor enhancer, or heavy cream.

Basic Plain Banana Frozen Yogurt
2 Nos Ripe Bananas.
½ cup Fat Free Greek Yogurt. (You can use hung yogurt of any other variety. Make sure to hang yogurt overnight to remove excess water.)
¼ cup Peanut Butter.
¼ cup Honey. (You can add Maple syrup or Dates in place of honey. Adding sweetener is optional. After blending, check for sweetness and adjust the quantity of sweetener accordingly.)
1 tsp Vanilla extract. (You can use any other flavor like Butterscotch, caramel, Banana etc.)
Chocolate Frozen Yogurt
4 tbsp Unsweetened Cocoa powder.
Strawberry Frozen Yogurt
3 cups Strawberries. (This will be equal to approx 750 gms.)
⅓ cup Fat free Greek Yogurt.
7 Nos Dates
1 tsp Lime Juice
For Basic Plain Banana Frozen Yogurt
Cut Bananas into round slices and deep freeze for 4 hours.
To a heavy duty Blender, Add frozen Banana.
Add yogurt along with frozen Banana.
Add Peanut Butter.
Add Vanilla Extract.
Blend until a smooth puree is formed.
Check sweetness. Add Honey or any sweetener accordingly.
Blend again to mix everything properly.
Pour the mixture in a freezer safe container.
Deep Freeze for atleast 4 hours.
Scoop and serve.
Chocolate Frozen Yogurt
The procedure is same as for Basic Plain Banana flavor. Along with all other ingredients, add 4 tbsp of unsweetened cocoa powder.
Pour mixture in to a freezer safe container.
Scoop out and serve.
Strawberry Frozen Yogurt
Cut Strawberries into thin round slices.
Deep freeze slices for 4 hours. You can use pre frozen strawberries too.
Add frozen strawberries to a heavy duty blender.
Add Yogurt.
Add 6-7 chopped Dates.
Add Lime Juice.
Blend till a smooth puree is formed. You may have to scrap out sides multiple times.
Pour the mixture into a freezer safe container.
Freeze for 4 Hours.
Scoop and Serve.
You can use hung yogurt of any other variety of yogurt in place of fat free greek yogurt. Make sure to hang yogurt overnight to remove excess water.
You can add Maple syrup or Dates in place of honey. Adding sweetener is optional. After blending, check for sweetness and adjust the quantity of sweetener accordingly.
Please make sure to use a heavy duty blender to blend. Otherwise the Motor may heat up.

Moong Palak Dhokla, Lentil Spinach Steamed Cake
Once a Gujarati staple, steamed and low cal Dhoklas are universally popular these days. Moong Palak Dhokla or Lentil Spinach Steamed Cake is a delicious version of most favourite Gujarati snack Dhokla.
In this variation, use of Moong Dal and Spinach has been made to prepare Dhokla.

½ cup Whole green Lentil. (Soaked overnight or at least for 5 hours.)
½ cup Semolina.
200 gms Spinach Leaves. (Roughly chopped.)
1 inch Ginger. (Roughly chopped.)
3 nos Green Chillies.
1½ tsp Salt.
1 tsp Jaggery.
1 tsp Fruit salt or Eno. (Substitute with 1/2 tsp Baking Soda plus 1/2 tsp Citric Acid f you dont have Eno.)
1 tbsp Lime juice.
Dry Tempering/Tadka
1 tbsp oil.
3 Nos Green Chillies slit.
1 tbsp White Sesame Seeds
½ tsp Black Mustard Seeds.
Wet Tempering/ Tadka
1 tsp Oil
½ tsp Mustard Seeds.
1 tsp Salt.
1/8 tsp Asafoetida.
1 tbsp jaggery
1 tbsp Lime juice
1 cup water
To Garnish
1 tbsp Coriander leaves. (Finely chopped.)
1 tbsp Grated Fresh Coconut.
1 tbsp Pomegranate Seeds.
Discard water from soaked Whole green lentil or Mung Dal.
Add Semolina.
Add Spinach.
Add Ginger and Green chillies.
Grind everything to a fine paste.
Take out in a bowl.
Add Salt.
Add lime juice.
Add Jaggery.
Fill a pot with water and keep on flame.
Grease a round pan or mould atleast 6 inch in diameter.
Add Eno to Batter.
Add Lime juice to Batter.
Pour batter in the greased pan.
Cover and steam for 20 minutes.
Once cool, release from sides and invert.
Dry Tempering/Tadka
In a pan, heat 1 tbsp oil.
Add Black Mustard Seeds.
When Mustard seeds splatter, add Sesame seeds.
Add slit green chillies.
Roast till Sesame Seeds turn crisp.Turn off flame and then pour tadka over Dhokla.
Wet Tempering/Tadka
Heat a tsp of oil.
Add Asafoetida.
Add mustard seeds.
Add two-three slit green chillies.
Add a cup of Water.
Add a tea spoon of salt.
Add Jaggery and let boil.
When it boils, turn off flame. Then add lime water.
Poor this water on Dhokla. Let it soak the water so that Dhoklas are soft and moist.
Garnish with Coriander leaves, Coconut and Pomegranate seeds.
