Sago may contain fewer nutrients than other whole grains, but when combined with fiber-rich vegetables it may have potential health benefits.

Even though it is customary to consume Sago or Sabudana Khichdi during Navratri, it is a popular everyday breakfast item in the state of Maharashtra.

Extracted from the edible part of the tropical palm tree root, sabudana has been a staple food for people living in the Tropical regions for a long time.

Sabudana is pure starch and hence has a high carb content.What makes it healthy is it’s gluten-free composition and is naturally a great source of complex carbs.

Beet Sabudana Khichdi

Beet Sago Khichdi is a tasty twist to one of the most popular breakfast items -Sabudana Khichdi of Maharashtra. Sabudana Khichdi is a popular dish during fasting in many states in Northern India.

Sago may contain fewer nutrients than other whole grains, but when combined with fiber-rich vegetables it may have potential health benefits.

Ingredients for roasting and grinding

  • 1 tsp ghee or oil
  • 3 cloves garlic
  • 2 Nos green chilli
  • 1/2 cup peanuts

Ingredients for Khichdi

  • 1/2 tsp cumin seeds
  • 1/2 cup finely grated beetroot
  • 1 cup Sabudana or Sago or Tapioca Pearls
  • 1 tsp salt
  • 1 tbsp lime juice
  • coriander leaves

Make Peanut mix

  1. Add ghee to a pan.



  2. Add green chilli and garlic and roast for a few minutes.



  3. Set aside.

  4. Roast peanuts in the same pan till peanuts turn crisp.



  5. Wash sabudana thoroughly and then soak in water for 6 hours. The level of water should be about 1/2 an inch above the sabudana. This will ensure that the soaked sabudana pearls remain intact. Too much water will make them mushy in the final recipe. After 6 hours, there should be no water left in sabudana.

  6. Heat ghee and add cumin seeds.



  7. Add finely grated beetroot and roast for about 5 minutes.



  8. Add soaked sabudana and continue to stir till the sabudana seeds turn translucent.



  9. Add salt and lime juice.



  10. Add the ground peanut powder and turn the flame off.



  11. Add chopped coriander leaves and serve hot with yogurt.

But for this vegan version, I have used ground Bengal gram lentil which is a staple in Indian cuisine. To convert this recipe into a satvik recipe, simply omit garlic and onion.

Here is a combined Thai and Manipuri version of Black Rice Pudding. Although more popular as a breakfast item in many South Asian countries, this also makes a great vegan dessert. And the best part is that it is super easy to make. In India, this type of rice is very popular in North Eastern states. The recipe for Thai Black Rice Pudding and the Kheer (Kheer is the Indian name for pudding) from Manipur is similar.

Called chak-hao, meaning rice ( chak) which is delicious ( ahaoba), black rice is eaten during traditional feasts. Chak-hao kheer is a popular dessert in these regions.

Black rice is indigenous to north-east India and is extensively grown in Odisha, West Bengal and Jharkhand. It is commonly eaten in Manipur because of its medicinal value.

You can use jaggery or coconut sugar as a sweetener for this recipe. Since Black rice is a powerhouse of nutrients, I am sure that you will definitely give this a try.

Thai Black Rice Pudding, Chak Hao Kheer from Manipur

Here is a combined Thai and Manipuri version of Black Rice Pudding. Although more popular as a breakfast item in many south asian countries, this also makes a great vegan dessert. And the best part is that it is super easy to make. In India, this type of rice is very popular in North eastern states. The recipe for Thai Black Rice Pudding and the Kheer (Kheer is the indian name for pudding) from Manipur is similar.

  • ½ cup Black Rice (soaked for 4 hours. I used Thai Black Rice which is easily available in all grocery stores in the US.)
  • ½ cup Water
  • ½ cup Thick Coconut milk
  • ¼ cup Coconut Sugar or Jaggery
  • ¼ tsp Cinnamon Powder
  1. Add soaked rice to a heavy bottomed pan. Keep the flame low-medium.



  2. Add water and coconut milk.



  3. Let it come to a boil.



  4. Cover and cook till rice becomes tender. It will take about 15-20 mnts. You may cook the rice in a pressure cooker or instant pot too. Cook for the same amount of time.



  5. Once rice is cooked, turn off the flame.



  6. Then add coconut sugar.



  7. Add cinnamon powder too.



  8. You may add a few tablespoons of coconut milk if the pudding appears to be very thick.



  9. Serve the pudding either warm or cold with any fruits of choice like mango or banana.



  10. Top with toasted coconut slices. You can also drizzle some coconut milk on top.
